Beef Enchilada Rice

This meal is amazing. 30 minutes, start to finish! Pair it with some hot sauce and chips and you are good to go! Lets get started.

1 lb hamburger meat
1 medium onion diced
2 tbs chili powder
1 tbs oregano
1 tsp cumin
1 tbs minced garlic
1 - 14 oz can diced tomatoes
1 - 4 oz can green chilies
4 oz can of water (use the empty green chilies can)
1 c minute rice
slice sandwich cheese

Brown your hamburger meat in a nonstick skillet on medium heat, with all of your spices and the onion. After the meat is brown add the diced tomatoes, green chilies and water. Stir well and bring to a boil. Next add in your minute rice and take the pan off the heat. Cover and let sit for 5 to 7 minutes, or until rice is tender.


Next place the sliced cheese on top and replace the lid. Allow to sit for another 3 or 4 minutes to let the cheese melt a bit.


My kids love this dinner. In fact, in my home it has been renamed Beef and Alotta Rice. My sweet daughter couldn't quite get 'enchilada' out! This is a great meal when you are in a hurry and still want something tasty. And there you have it, Beef Enchilada Rice. Enjoy!

  3. They are corn tortillas... sliced and fried in veggie oil. With a tad of salt. :) yummy

  5. I made this for supper tonight! YUMMMM!! I wanted a yummy mexican dessert but I took your advice and wrote out a list and stuck to it, so I didn't plan for dessert:( I had some leftover flour tortillas in the fridge, the kind that are not cooked yet, just rolled so that you can cook them when you are ready!! Love them, you can find them in the refridgerator section at Wal-Mart. I fried them in the oil left over from homemade chips and sprinkled them with sugar and cinnamon!!! AMAZING!!!! Thanks for a delicious supper idea to go with Friday Family Night!!!!
